Step-by-Step Instructions for these Easy Pumpkin Cupcakes
- Preheat the oven to 350℉. Line a muffin tin with muffin liners to get started.
2. In a medium bowl, combine the eggs, sugar, oil, and pumpkin puree. Use a hand mixer to blend until smooth. This is the handheld mixer I like to use!
3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
4. Pour the wet ingredients into the dry ingredients, and use the hand mixer again to combine until smooth.
5. Fill each muffin liner about ⅔ full. Bake for 15–18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. I like to use this cookie scooper to scoop the batter into the muffin liners.

- 15 oz can of pumpkin
- 2 c sifted flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
