Preheat oven to 350℉
Combine the eggs, sugar, oil and pumpkin in a medium sized bowl and mix together with a hand mixer until blended.
4 eggs, 1 2/3 c sugar, 1 c vegetable oil, 15 oz can of pumpkin
In a large bowl stir together flour, baking powder, baking soda, cinnamon and salt.
2 c sifted flour, 2 tsp baking powder, 1 tsp baking soda, 2 tsp cinnamon, 1 tsp salt
Add the wet ingredients to the dry and mix again with the hand mixer until combined and smooth.
Fill each muffin liner 2/3 full and bake for 15-18 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
Let the cupcakes cool before frosting—or enjoy them warm and plain!
