Start by adding your fat (either drippings from your meat or butter) to a small or medium saucepan over medium heat. Allow it to melt completely. This is my favorite saucepan!
roux

2. Make the Roux:
Once the fat is melted, whisk in the flour to create a roux. Continue whisking until the mixture becomes thick and bubbly, which should take about 1-2 minutes.

3. Add the Liquid Slowly:
Gradually pour in your broth or meat juices, just a little at a time. Keep whisking constantly to ensure no lumps form. As you pour in the liquid, the mixture will begin to thin out and smooth into a gravy consistency.

    Tips for the Perfect Gravy

    • Use Pan Drippings for Extra Flavor: If you’ve just roasted meat, don’t let those flavorful drippings go to waste! They add a deep, savory richness that broth alone can’t match. Just strain the drippings to remove any bits before using.
    • Whisk Continuously: This is key to achieving a smooth texture without lumps.
    • Adjust Seasonings to Taste: Gravy is all about flavor, so don’t be afraid to add more seasonings to get it just right.
