Over the years we have tried many variations of pork roast, and we’ve finally figured out our own go-to recipe that checks all the boxes: easy, flavorful, and perfect for feeding a crowd or making delicious leftovers. And best of all this recipe uses minimal ingredients!

There’s something truly magical about the smell of a slow-cooked pork roast traveling throughout the house. It brings warmth, comfort, and the promise of a hearty meal.

One of the best things about this recipe is how easy it is to make with just a few ingredients. I like to use my homemade dry rub for pork or chicken—made from brown sugar, smoked paprika, cumin, and a handful of other seasonings. It creates a depth of flavor that perfectly complements the pork without overwhelming it. It’s easy to put together and it makes enough to use for many other dishes!

Once you have removed the pork to shred, carefully strain the broth left in the slow cooker and set it aside. You will want to add about 1/2-1c. of the juices back into the slow cooker once you’ve shredded the meat. These flavorful drippings will help keep the pork moist and delicious.

Ingredients

  • 5-7 lb pork roast cut into large chunks
  • 2 onions sliced
  • 2-4 tbsp pork rub check out my pork rub recipe
  • 1/2-1 tbsp minced garlic
  • enough water to mostly cover the pork chunks

Instructions

  • Spray slow cooker with cooking spray.
  • Place a handful of the onion slices on the bottom of the slow cooker, add in the pork chunks and top with the remaining onion slices.

  • Sprinkle the dry rub and minced garlic over the meat and onions. Pour in enough water to mostly cover the pork, making sure the meat stays moist while cooking.

  • Put on slow cooker lid, and cook on low 8-10 hours.
  • Once done, the pork should shred easily; it should just fall apart. Place meat on a plate and shred, discarding of any fat.
  • Strain the juices that are left in the slow cooker and set aside.
  • Add the shredded pork back into the slow cooker and add in 1/2 c. of the reserved juices. This will help keep the meat moist and not dried out. If you want to add more juices you definitely can!
  • Place slow cooker on warm until ready to serve.
