Place 1 cup chocolate chips and 1 tbsp coconut oil into a small glass bowl.
Melt the chocolate chips in 30-second increments, stirring between each interval until smooth.
Dip half of each cracker sandwich into the melted chocolate and tap off any excess. Add on fun sprinkles if desired!
Rest cracker sandwiches on parchment paper to let the chocolate set up.
Store in an airtight container.
